Easy, Authentic Carbonara Recipe

Sometimes all you want and need is a quick and easy dinner. But there is no reason why this can’t be delicious, fulfilling and authentic.

This recipe will only take around 20 minutes maximum and creates the most delicious dinner.

Serves 3

What do you need?Quick Easy Carbonara

100g pancetta or smoked bacon

50g pecorino cheese

50g parmesan

3 large egg

300g spaghetti

2 garlic cloves, peeled and bashed

50g butter


What do you do?

  1. Put a saucepan of water and 1 tsp of salt on to boil. Finely chop the pancetta or bacon. Finely grate both cheeses and mix them together. Beat the eggs in a medium bowl, season with a little freshly grated black pepper and set aside.
  2. Add the spaghetti when the water comes to the boil, and when it boils again turn down to simmer, covered, for 10 minutes or until al dente.
  3. Squash the peeled garlic with the blade of a knife, just to bruise it. Drop the butter into a large wide frying pan, as soon as the butter has melted, tip in the pancetta and garlic. Leave these to cook on a medium heat for about 5 minutes, stirring often, until the pancetta is golden and crisp. Remove the garlic from the pan using tongs or a slotted spoon.
  4. When the pasta is ready lift it from the water and place it in the frying pan with the pancetta. Don’t worry if some water drops in the pan as well (you want this to happen) and don’t throw the rest of the pasta water away yet.
  5. Mix most of the cheese in with the eggs, keeping a small handful back for sprinkling over later. Take the pan of spaghetti and pancetta off the heat. Now quickly pour in the eggs and cheese and mix to thickens but don’t let it scramble. Add extra pasta cooking water to keep it saucy You don’t want it wet, just moist. Season with a little salt, if needed.
  6. Serve in a large pasta bowl with some extra cheese sprinkled over and a good twist of freshly ground black pepper! Enjoy!
